What is non real-time?

Non real-time is a technology that starts transferring video from the DV camcorder onto the PC and temporarily stores it in a buffer. When the buffer is full, the actual encoding will start. 

By using non real-time, the program will ensure that no frame are dropped (missed) during the encoding process and it also reduces the CPU resources.

In contrast, encoding directly from the DV camcoder into the output file would be considered real-time.
